How to make a healthy birthday cake for kids that tastes great

Ingredients

Dry ingredients

  •       1 cup whole wheat flour
  •       1 1/4 cup of all-purpose flour (optional)
  •       1 1/2 teaspoon of baking powder
  •       1 teaspoon of baking soda
  •       1/2 teaspoon of salt

Wet ingredients

  •       1/3 cup of coconut oil (it would be best to melt it and let it cool halfway, not completely)
  •       1/4 cup of applesauce (preferably unsweetened)
  •       2 eggs
  •       2/3 cup of maple syrup (preferably pure)
  •       1 tablespoon of vanilla extract (preferably pure)
  •       1 1/2 cups buttermilk (optional)
  •       1/3 cup sprinkles (you can put more)

Instructions

Step no. 1: First, turn on the oven so that it has enough time to reach the required temperature and prepare the cake pans by spraying them with non-stick cooking spray and lightly flouring them.

Step no. 2: Choose a clean bowl and mix all the dry ingredients in it (both types of flour, baking powder, baking soda, and salt). In another bowl, whisk the wet ingredients in this order: coconut oil with applesauce, followed by the eggs, and then the maple syrup and vanilla extract. When done, simply mix half of the dry ingredients with half of the wet ingredients and stir to combine. When the mixture becomes compact, add half the buttermilk, stir to combine, add the other halves of the dry and wet ingredients and mix until everything is well combined.

Step no. 3: Divide the mixture into two trays and bake for between 20 and 30 minutes. We recommend checking with a toothpick to see whether the cake is completely baked. Leave to cool.

Step no. 4: The last step concerns the preparation of the inevitable glaze. You must mix the cream cheese and Greek yogurt until smooth using an electric mixer. Meanwhile, melt the white chocolate and add it to the bowl with the cream cheese and Greek yogurt and beat to combine. It would be best to immediately frost the cakes with the glaze, preferably using a spatula for a smooth touch.
